CHOCOLATE EASTER EGG COOKIES

Chocolate cookies shaped and decorated like Easter eggs can be a special treat for both  young and old. Get the kids and any grandparents you can find to help in cutting out and baking the cookies. Let everyone decorate with the easy chocolate frosting. This time of year there are many Easter-themed candies and decorations available. Those tiny frosting tubes can also be used to make creative designs. The sky is the limit in everyone’s creativity for these festive cookies!

Sugar cookie dough can also be shaped like Easter eggs using the method described below.  Cut the dough a bit thicker and decorate for a festive theme for the cookie tray. Children will  love to help.

INGREDIENTS:

1 cup shortening

½ cup white sugar

½ cup brown sugar

2 eggs

2 oz semi-sweet chocolate squares, melted

½ teaspoon vanilla

2 ¾ cups all-purpose flour

½ teaspoon soda

1 teaspoon salt

Tiny decorating candies (optional)

Decorator white icing (recipe below)

METHOD:

  1. Using electric mixer beat together until fluffy the shortening, sugars, eggs, chocolate and vanilla.
  2. In another bowl, mix together the flour, soda, salt. Add to the first mixture using either the mixer or your hands. Mix only until just blended.
  3. Shape dough into 2 smooth rolls about 3 inches in diameter. Then gently rock each roll back and forth until the roll resembles an oval egg shape. Roll outside of roll in tiny candies.
  4. Wrap in wax paper and chill until firm – up to 2 hours.
  5. Preheat oven to 400F.
  6. Slice cookie dough rolls about  ¼ inch thick and bake 8 to 10 minutes or until firm.
  7. Cool on cooling rack. Decorate with icing and pretty Easter themed decorating candies.

Makes about 4 dozen.

Decorator White Icing:

2 cups sifted icing sugar

2 tablespoons cream

2 tablespoons soft butter

Beat sugar and butter. Add enough cream to make the icing firm enough to hold its shape if you wish to use an icing tube OR add extra cream to make it of spreading consistency. The icing may be tinted with food coloring, if you wish. Place decorator candies on immediately, if using.
