I love brownies anytime! Fudgie or cake-like, with nuts or without, brownies are a yummy treat at about 3:00 o’clock in the afternoon in the middle of a busy writing day.

Brownies, moist and chocolatey, are a treat any time, but this is a recipe that has an unexpected bonus. Crushed pineapple gives the squares an added bonus in nutrition. Yes, you can reduce the sugar to half the amount called for in the recipe as the pineapple adds its own natural sweetness.

Pineapple Brownies are an easy, quickly put together recipe for unexpected guests.The recipe calls for simple ingredients that are usually found in everyone’s pantry. Any nut can be substituted for the walnuts called for, but walnuts add that bit of sharpness and crunch that elevate these brownies above the rest. The best part is that the prep is easy – all done in one pot.

INGREDIENTS:

1/2 cup shortening

2 – 1 oz squares unsweetened chocolate

1 cup granulated sugar

2 eggs

1-1/2 cups crushed pineapple drained

1 teaspoon vanilla

1 cup flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/2 cup chopped walnuts

PREHEAT OVEN: 350°F.

METHOD:

  1. Grease an 8 inch square baking pan. Line with 2 strips of parchment paper with about a 2 inch overhang. Spray the parchment paper with no-stick baking spray.
  2. In a medium saucepan, combine shortening and chocolate and melt slowly over low heat until they are well-blended.
  3. Remove from heat and stir in sugar.
  4. Add eggs, pineapple, and vanilla and beat well with a wooden spoon.
  5. Sift together flour, baking powder, salt, baking soda and add to mixture. Stir well. Add nuts.
  6. Spread evenly in pan and bake for 35 minutes. Cool in pan on cooling rack.
  7. Remove brownie from pan by lifting the parchment paper.
  8. Frost with the pineapple frosting or leave plain. Cut into 9 equal pieces.

PINEAPPLE ICING:

1-1/2 cups icing sugar

3 tablespoon soft butter

2 tablespoons crushed pineapple

1 tablespoon pineapple juice

Beat till smooth. Spread on cooled brownies.

Yield: 9 generous pieces
