My Glazed Orange Nut Bread is an easy and quickly put together recipe that I often go to when I need something light and tasty for a tea or a coffee break with friends. This is such a basic recipe that usually everything I need is in the fridge or pantry. An orange, both rind and juice, and a few chopped nuts add a fresh flavor to this buttery moist loaf.

Before you begin, spray an 8 ½ x 4 ½ x 2 ½ inch loaf pan with no-stick baking spray. Preheat oven to 350°F. Then measure out all your ingredients beside your mixer. In 10 minutes, your orange nut loaf is ready for the oven.

The secret to the wonderful flavor in this loaf is the glaze that is brushed onto the loaf after baking. A quick minute in the oven after glazing sets the glaze and your loaf is ready to cool and slice.

BTW, I love this loaf sliced and buttered generously, with slices of my favorite Hvarti or Swiss cheese and some red seedless grapes for lunch. Oh nummm!

Ingredients:

1 ¾ cups flour

1 ½ teaspoon baking powder

1 teaspoon salt

¼ cup softened butter or margarine

¾ cup sugar

2 eggs

2 teaspoons freshly grated orange rind

1/3 cup chopped walnuts

½ cup milk

Glaze: 2 tablespoons orange juice + 1 tablespoon sugar

Preheat oven: 350°F.

Method:

  1. Whisk together flour, baking powder and salt in a small bowl. Set aside.
  2. In beater bowl, cream butter or margarine.
  3. Slowly add sugar. Beat well until mixture is smooth and creamy.
  4. Add egg one at a time, beating well after each.
  5. Add orange rind.
  6. Add dry ingredients alternately with milk, beginning and ending with dry ingredients. Mix well.
  7. Pour batter into greased 8 ½ x 4 ½ x 2 ½ inch loaf pan.
  8. Bake in preheated oven 50 to 60 minutes until toothpick comes out of centre of loaf clean.
  9. Cool 10 minutes in pan.
  10. Mix together orange juice and sugar. Brush over top of loaf with pastry brush until all glaze is used up. Pop back into oven for 1 minute.
  11. Cool completely before you slice the loaf.

Total Time: 1 hour, 17 minutes

Yield: 1 loaf

Notes

This recipe uses the juice and rind of one orange. Very tasty!
