I have been sharing some of my fave chocolate recipes with you, but have not shared any gluten free recipes for Valentine’s Day.

“Not Fair!” I hear my daughter telling me. She loves brownies, warm and gooey, just out of the oven. Unfortunately, she is wheat and gluten intolerant (more about that in another post). So here for all of you who are following a gluten free lifestyle, I will share with you my favorite recipe for yummy, delicious gluten free brownies. In time for Valentine’s day.

One of the hardest desserts to get right is brownies. They need to be a certain density with just the right crispy crust top and a chewy centre. By using a combination of flours, it is possible to get the right bite for your brownie. Today’s recipe has been:

Ingredients:

1/2 cup Almond Flour

1/4 cup Sweet Sorghum Flour

1/2 teaspoon Himalayan Fine Sea Salt

1/4 teaspoon Gluten Free Baking Soda

1 cup Brown Sugar, packed

1/2 cup Gluten Free Chocolate Chunks

1/2 cup Pecans, chopped

1/2 cup Egg Substitute

1 teaspoon Gluten Free Vanilla

1/2 cup Coconut Oil

1/4 cup Gluten Free Mini Dark Chocolate Chunks

Method:

Prepare 8 x 8-inch pan by buttering the pan . Line with buttered parchment paper  that has a 2-inch overhang – this will be used for lifting the brownies out of the pan after baking and cooling.

Preheat oven: 350°F.

1.Whisk together all the flour, sea salt, baking soda and brown sugar in a bowl. Stir in the chocolate chunks and nuts. Set aside.

2.Melt 1/2 cup dark chocolate chunks.

3. Combine wet ingredients (egg substitute, vanilla, coconut oil). Add melted chocolate.

4.Add wet ingredients to all dry ingredients. Combine the two, stirring with a wooden spoon, just until dry ingredients are wet.

5.Pour into a prepared 8×8 pan.

6.Bake for 30 to 35 minutes until top cracks.

7.Remove from oven and let cool for five minutes.

8.Cover top of brownies with 1/4 cup mini dark chocolate chips, let sit for a couple of minutes then spread with knife. Let cool another 5 to 10 minutes before serving.

9.Lift the cooled brownies out of pan and cut into 9 generous pieces.

Prep Time: 30 minutes

Cook Time: 35 minutes

Yield: 9 generous pieces
