Chicken in Curry Sauce is not a “baked” recipe, but is favorite in our house that I wanted to share with you. On a day when we’re all really busy and hungry, this recipe fills the need for a tasty, quick dinner.

Chicken is such a versatile meat for families on the run with hockey, soccer, baseball, dance, yoga, and the other million and one commitments that we have today. While it’s easy to go grab a burger on the way to practice, everyone does get tired of that too. We also need to consider our and our family’s nutritional needs. What to do?

Enter chicken. The answer to today’s busy family schedule. The quick and easy answer to “what am I going to make for supper tonite?” Chicken pieces cook up quickly, especially if they’re boneless. Choose a quick method – barbecue, stir fry, sauté, broil, microwave – and the sky is the limit for something new and tasty.

Chicken in Curry Sauce is one of those quick and easy recipes. Merely quickly brown the chicken breasts or use chicken breast filets (they cook even more quickly). Remove from the skillet. Mix up the sauce and cook until thickened in the frypan. Return chicken to the pan with drained mandarin oranges. Simmer until cooked through – about 5 minutes. Plate chicken on a platter with lots of sauce spooned over the chicken. Serve with rice or boiled potatoes and buttered steamed green beans. Supper is served!

This recipe can easily be halved or doubled depending on the number you need to feed.

Note: If your diet is gluten free, be sure to use GF chicken stock.

Chicken in Curry Sauce

Ingredients:

2 tablespoons butter or margarine

4 boneless chicken breasts

½ cup chicken stock

¼ cup honey

¼ cup frozen orange juice concentrate

1 tablespoon lemon juice

1 tablespoon cornstarch

1 teaspoon curry powder (I like the medium curry)

Salt and pepper

1 can mandarin oranges, drained

How to Cook:

1. Melt the butter in the frypan or non-stick skillet. Brown the chicken. Remove the chicken from the pan. Keep warm.

2.Using a 2-cup glass measuring cup, whisk together the stock, honey, orange juice concentrate, lemon juice, cornstarch and curry powder.Pour into skillet and whisk together as the sauce thickens.

3.Place chicken in the sauce.

4.Add orange segments to the pan and simmer until the chicken is done – about 5 minutes.Serve chicken with lots of the yummy curry sauce spooned over.
