Cherry Lime Cheesecake

 

 

 

 

 

 

Our Cherry Lime Cheesecake was voted by our tasters to be a cheesecake “to die for”. The lime juice adds a subtle citrusy punch.

Cherry Lime Cheesecake is a favorite at our house. In the summer when the sour cherries are in season, this is a perfect way to showcase their tangy goodness. The cheesecake is creamy and slightly sweet with whole pitted cherries to elevate the cake from ho-hum to fabulous (if you can ever call a cheesecake “ho-hum” :-). The hint of lime adds that subtle something that delicately lingers on the tongue and keeps you reaching for the next taste.

As I write this post, it is January. Christmas goodies are just about all gone. What to make when friends come over for coffee and dessert tonite? A jar of canned pitted  sour cherries or frozen whole pitted sour cherries and some cream cheese and you’re good to go. If you don’t have your own canned or frozen cherries, grocery stores stock good quality canned sour cherries from Poland and Hungary now.

Today’s cheesecake is a crustless cheesecake, so this goes together quickly and easily. I suggest that you measure everything out before beginning. Eggs, butter and cheese should be at room temperature before beginning.

You need:

2 cups pitted sour cherries

1/2 cup soft butter

1 cup sugar

1 package (9gm) vanilla sugar (I like Dr. Oetker)

4 tablespoons lime juice

4 eggs, separated

4 tablespoons semolina (Cream of Wheat)

3 teaspoons baking powder

1 package (43 gm) vanilla pudding mix (the kind you cook)

4 cups (32 oz.) cream cheese

Preparation:

Preheat oven: 350 °F.

Grease a 9 inch springform pan using shortening or no-stick spray.

Place cherries in a strainer to drain.

Method:

  1. Cream butter and 1/2 cup sugar until smooth. Beat in lime juice and vanilla sugar.
  2. Add egg yolks and beat well.
  3. Whisk together cream of wheat, baking powder and pudding mix. Slowly add to the egg mixture.
  4. Add cream cheese. Beat well.
  5. Fold in cherries.
  6. Beat egg white and remaining ½ cup sugar till stiff peaks form. Fold in to the cheese mixture.
  7. Place batter into the prepared pan. Smooth top.
  8. Bake in preheated oven about 70 minutes until top feels somewhat firm. Remove from oven. Let rest on a cooling rack for 30 minutes in the pan. Remove from pan and place on a serving plate. Chill thoroughly.
  9. Before serving, dust with sifted icing sugar.

Yield: 12 generous slices

Slice using a knife dipped in hot water.
