Chocolate is one of the most popular flavors in the world. I love chocolate desserts, all kinds – brownies, cakes, mousse, chocolate chip cookies, chocolate chunk cookies (even better!), and chocolate pies. I also own lots of “chocolate” cookbooks.

My enjoyment of chocolate is known by friends and family alike. One weekend, my hubby and I were away and the offspring were home. When we got back, the kids asked if I knew that I had chocolate stashed all over the house. duh! Of course! I wouldn’t want to run out when I’m writing!!!

Today’s recipes focus on cooking with chocolate. First, let’s talk chocolate.

Chocolate comes from the seeds of the cacao tree. They are extremely bitter and must ferment to develop the flavor we all love. Once the beans have fermented, they are cleaned, dried and roasted. The shells are removed and the resulting cacao nibs are heated, forming chocolate liquor which then can be separated into cocoa solids and cocoa butter.

There are two forms of chocolate – bitter chocolate and sweet chocolate. Often, these chocolates can not be interchanged in a recipe without changing the flavour outcome \.

  • Baking chocolate is a bitter chocolate because it contains both cocoa solids and cocoa butter, but no sugar.
  • Sweet chocolate contains both cocoa solids and cocoa butter, but also vegetable oils and sugar.
  • Milk chocolate is a sweet chocolate that has had milk powder or condensed milk added to it.
  • White chocolate has cocoa butter, sugar and milk, but no cocoa solids; hence, the white color.

Today I would like to share 3 of my favourite very easy chocolate pie recipes. To make these pies even easier, buy your pie shells if you’re in a hurry… OR…like when I have some extra time, I often make 5 pie shells at a time, baked or not, and pop them into the freezer, so that I’m ready for a last minute dessert.

After you have baked or chilled your pie shell, these pies do not need any baking…a real time saver!  Once you have cooked the yummy filling, all you have to do is pour it into the pie shell and chill. Chill the pies for about 4 hours or overnight. These pies can be topped with whipped cream if desired or served with a scoop of your favourite vanilla ice cream on the side.

 

 

 

 

 

 

 

 

 

 

 

Chocolate Chiffon

Ingredients:

1 baked pie shell
1 envelope unflavored gelatin
1/4 cup cold water
1/2 cup sugar
1/2 cup cocoa
1/2 teaspoon salt
1 1/4 cup milk
3 egg yolks
1 cup heavy whipping cream
3 egg whites

Method:

1.Sprinkle gelatin over water in a bowl; let stand for 5 minutes.

2. Whisk together sugar, cocoa and salt in a saucepan. Stir in milk and egg yolks.

3. Cook over low heat stirring constantly, until mixture thickens slightly, do not boil.

4. Remove from heat.

5. Add gelatin; stir until dissolved. Chill for 1 hour.

6. Whip cream until peaks form. Gently fold whipped cream into chocolate mixture.

7. Beat egg whites until just stiff and add to chocolate.

8. Pour mixture into pie shell. Chill until set.

Chocolate Amaretto Pie

Ingredients:

1 graham cracker crust
1/3 cup cocoa powder
1 cup sugar
1/3 cup cornstarch
1/4 teaspoon salt
2 3/4 cup milk
3 tablespoons Amaretto (or Amaretto extract)
2 tablespoons butter
1 teaspoon vanilla extract

1 cup whipping cream + 1 teaspoon amaretto + 1 teaspoon sugar

Method:

1.Whisk together cocoa, sugar, cornstarch and salt in a saucepan.

2. Gradually blend in milk, stir until smooth.

3. Cook over medium heat, stirring constantly. Boil for 1 minute.

Creamy Chocolate Filling

 

 

 

 

 

 

 

 

 

 

 

4. Remove from heat. Blend in Amaretto, butter and vanilla.

5. Pour into pie crust. Chill until firm.

6. Garnish with whipping cream that has been whipped with sugar and amaretto until soft peaks form.

Chocolate Banana Cream Pie

1 baked pie shell
2 oz. unsweetened baking chocolate
2 1/2 cups milk
1 cup sugar
5 tablespoons cornstarch
1/2 teaspoon salt
3 egg yolks, beaten
1 tablespoon butter
1 teaspoon vanilla extract
2 medium bananas, sliced
1 cup whipped cream

1.Place baking chocolate and 1 1/2 cup of milk in top of double boiler over simmering water; heat and stir until melted.

2. In a bowl whisk together sugar, cornstarch and salt; blend in remaining 1 cup of milk.

3. Gradually add to chocolate mixture, stirring constantly.

4. Immediately whisk in egg yolks.

5. Cook until mixture thickens, stirring constantly. Cook and stir 5 additional minutes.

6. Remove from heat; add butter and vanilla. Pour into a bowl to cool. Place plastic wrap right on the surface, so no skin forms.

7. Spread a small amount of filling over the bottom of the pie shell. Arrange a layer of banana slices on top of filling. Spread remaining filling. Cover pie and chill.

8. Garnish with banana slices and whipped cream.

Chocolate Chiffon Pie

Ingredients

  • 1 baked pie shell
